It’s amazing what a little salt, some well-chosen spices and a bit of time can do to a vegetable. Learn the basic processes involved in fermenting almost any vegetable, while making your own jars of sauerkraut and kimchi to take home. Make your favorite fruits and veggies last by turning them into pickles or preserves using the science of water bath canning. We’ll discuss safety, equipment and reliable resources, all while working through the whole process together in class.
